Warming Butternut Squash Soup

This is a great soup for the fall and winter months as our bodies begin to crave more

warming and grounding meals. The ingredients are nutrient dense and will support your immune system. One of the key ingredients is bone broth. Bone broth has been used for thousands of years to heal and nourish the body. It is a great source of protein, anti-inflammatory and easy to digest. I began incorporating bone broth into my diet several years ago when I started the journey to heal my gut. Bone broth has amino acids and collagen that support the gut and help to heal digiestive issues.


Butternut squash is high in antioxidants and it’s beautiful color reflects it has beta-carotene. Beta-carotene is converted in the body to Vitamin A and is an incredible tool to boost immunity and reduce inflammation. See below for the full recipe and leave a comment if you end up making it!

Ingredients

1/2 Sweet Onion

2-3 cloves of garlic (depending on your love for

garlic)

1 pouch of Bonafide Chicken Bone Broth

1/2 tbs Green Thai Curry Paste

1 tsp curry seasoning

Small butternut squash

Drizzle of olive oil


Optional: Garnish with sesame seeds, hemp seeds, avocado or pumpkin seeds


Instructions


Prep: If you use Bonafide both, you will need to defrost it prior to use. You can also use pre-cut butternut squash.

  1. Preheat oven to 400 degrees Fahrenheit. Cut butternut squash in half and scoop out the seeds. Line baking sheet with parchment paper and place butternut squash face down. Use a fork to poke the squash.

  2. Roast butternut squash for roughly 35-45 minutes depending on the size of the squash. If you are using a large squash, it could take an hour.

  3. While the squash is cooking, cut up half an onion and mince 2-3 cloves of garlic.

  4. Once cooked and cooled enough to handle, scoop out the squash using a spoon or ice cream scoop.

  5. In a large soup pot, drizzle olive oil over medium heat. Add in 1/2 tbs of green Thai curry paste. Sauté half a sweet onion for several minutes before adding the minced garlic and butternut squash.

  6. Pour in the entire pouch of Bonafide chicken broth and let the soup simmer for 10-15 minutes.

  7. Transfer soup into a blender or use an immersion blender to blend the soup.

  8. Pour into a bowl, garnish with your favorite seeds and enjoy!
